7 days of Paleo- my weekly meal plan
The hardest part of sticking to a paleo diet for me, is when I don't prepare ahead of time i.e. shopping and a meal plan- so that I always have the right food around. So, here are my 7 paleo meals for the upcoming week, using recipes from so many of the paleo blogs I follow and love. I am avoiding almond flour right now, because I think it might not agree with me. I only planned 7 meals, because I hope to have enough leftovers to do me for lunches. I will also probably end up cooking a non-paleo starch for my family. They are not on board yet. Breakfast is generally an egg scramble, with breakfast sausage, vegetables, mushrooms and avocado.
Meal 1:
My own Crockpot Asian Chicken Thighs
(easiest meal ever)
-put about a quarter cup of coconut aminos, the juice of 1 orange and some honey in the crockpot
-add chicken thighs
cook on low about 6 hours
Steamed broccoli
Caulifower/garlic mash

My own Buffalo Cauliflower
(I am trying to copy this recipe from a restaurant in L.A. called Mohawk Bend. Their cauliflower is amazing. I think they batter it somehow, which I am not doing though)
Steamed cauliflower, coated with melted butter (grass-fed) and Frank's Red Hot Sauce

Am I neglecting you?
Ingredients: 6 boneless pork chops, 1/2 cup almond flour, 1/2 cup dessicated coconut, 1 T garlic powder, 1/4 cup olive oil, 1 T onion powder, salt & pepper (if your version of paleo allows it), 4 small apples (peeled, cored and sliced), 1/4 cup ground cinnamon.
Directions: Preheat toaster oven to 400. Pound and flatten the pork chops. Put the almond flour, coconut, garlic powder, olive oil and salt&pepper in one bowl. Put olive oil in another. Dip pork in olive oil and then into the flour mixture to coat both sides. Put apples in toaster oven and bake 10-15 minutes. While apples are cooking, pan fry the pork chops until golden brown on each side.
